Healthy Vegan Cookies! Chocolate Oat Date - No sugar added!
This ingenious recipe was created by Dr. Delbruck’s mother. These are the ultimate healthy cookies, created for her daughter during Dr. Delbruck’s pregnancy to give her a delicious way to consume cacao and dates - both superfoods especially in pregnancy - without any added sugar/processed junk! It continues to be an absolute favorite!! Enjoy!!
There are many benefits to consuming Cacao. Cacao is a superfood, It's 100% Plant-based, It improves blood pressure and circulation, it improves brain funcion and much more!
Oats (1.5 cups)
Dates (1 cup packed, pitted)
Tahini (½ cup)
Cacao/cocoa powder, unsweetened (2-3 tablespoons)
Soy Milk (⅓-½ cup - depending how dry the dates are)
Almond Extract (5-6 drops)
Preheat oven to 350 degrees F.
Add all ingredients to a food processor and process until you can make the dough into balls by scooping with a spoon.
Shape into cookies using cookie cutters or by pressing the balls with the back of a spoon.
Place on parchment paper on a baking sheet.
Bake for 15-20 minutes.
